30+ years of foodservice experience; 2 degrees, first is in pastry school of arts, and second is in culinary management. Chef Nicklas spent two years apprenticing in Europe with internationally acclaimed chefs like Werner Vögeli and Bernard Loiseau. He came to the United States in 1998 with Marcus Samuelsson to open Aquavit in Minneapolis. Chef Nicklas had the good fortune to cook alongside culinary masterminds such as Thomas Keller and the late Charlie Trotter. Chef Nicklas has worked across hotels and 3-star Michelin restaurants throughout Europe and the United States. Prior to Land O'Lakes, Chef Nicklas led culinary product development and was the key chef contact with commercial and non-com top 100 food accounts at General Mills. Chef Nicklas volunteers with MICC and Second Harvest Heartland in Minneapolis.
